The Miyazakigyu Wagyu tenderloin filet/filet mignon comes from the Miyazaki Prefecture on southern Japan’s Kyushu Island. Arguably the pièce de résistance of Japanese Wagyu steaks, the extensively marbled tenderloin filet has a velvety texture, signature flavor, and melt-in-your-mouth finish. Known for exceeding expectations, the A5 graded (the highest quality of Japanese beef) Miyazakigyu Wagyu filet mignon leaves a lasting impression on even the most cultured palate!

Due to natural variations in cattle shape, size, and/or weight, cuts may vary. It is normal to see slight variations in color, depending on both the type of product and the aging process.

Best cooked quickly and over direct heat, the Miyazakigyu Wagyu filet mignon’s tenderness and rich flavor are best highlighted when the steak is cooked to a medium-rare doneness.

To pan sear and finish in the oven, begin by generously seasoning all sides of the filet mignon with salt and pepper.

Heat a cast iron skillet over high heat with a little grapeseed oil.

Once the oil beings to smoke, add the filet mignon to the pan. Cook the steak on one side for 2-3 minutes. Add a little butter, rosemary, and garlic to the pan. Cook the other side for 2-3 minutes, until a crust has formed.

Transfer the skillet to the oven to finish cooking. Check the internal temperature of the filet mignon, and cook to your desired doneness.

Transfer the steak to a cutting board, and let it rest for at least 10 minutes before slicing.

Rare 120°-125°
Medium-Rare 130°-135°
Medium 140°-145°
Medium-Well 150°-155°
Well Done 160° and above

PACKAGING: Each frozen and individually vacuum sealed product is carefully packed with dry ice and/or gel packs. Orders will be delivered frozen or slightly thawed (but still cold) depending on the time in transit.
