A versatile and flavorful cut, the Fullblood Wagyu underblade steak comes from the chuck primal under the shoulder blade. This newly released cut is generously marbled, tender, and extremely flavorful. The amount of fat in the underblade steak produces a rich, buttery quality. This is a super premium cut that is highly sought after and is also known as the Zabuton steak. Zabuton means ‘little pillow’ in Japanese because the cut is so immensely marbled with fat, leaving it soft and tender. We recommend marinating and broiling the steak or grilling the steak at a high temperature, for optimal results. With either cooking method, this tender and tasty cut is sure to impress the most cultured palate!
