Due to natural variations in our cattle, shape, size, and/or weight of individual cuts may vary. It is normal to see slight variations in color depending on both the type of product and the aging process.
Although picanha is frequently cooked on skewers in Brazilian churascarias, I followed the advice of a Brazilian fellow named Guga on Youtube and cut it into steaks along the grain. The picanha made six steaks a little more than one inch thick. I seasoned each steak with kosher salt only and grilled them on my PK 360 until they registered 130 to 135 degrees Fahrenheit on my meat thermometer (about medium rare to medium), I then rested them under a tent of foil for 10 minutes. The results were so fantastic that I have already ordered two more. Keep up the good work Double8 cattle. You folks grow the best beef I have ever eaten.

I haven't eaten the beef yet, but it arrived perfectly vacuum sealed and packed nicely in dry ice and insulated material. The team has also been incredible in giving me a heads up before the popular cut was restocked, and also helping me in my request to delay shipment until I was back from vacation. The meat itself looks incredible, beautiful marbling, very nice uniform thickness, a quite a large portion on the picanha, and very nice fat layer. Will do business again!
