From the same cut of beef as the renowned Filet Mignon, tenderloin/filet tips are the ends of the tenderloin. Their unique, tapered shape is due to the location of the cut, while their superior flavor is due to the quality of the tenderloin. Due to natural variations in our cattle, shape, size, and/or weight of individual cuts may vary. It is normal to see slight variations in color depending on both the type of product and the aging process.

Due to the variation in size and thickness of the Wagyu beef tenderloin tip and tail pieces, it can be more difficult to obtain a consistent cook throughout. Therefore, these end pieces are great ingredient cuts. Here are some ideas:
KABOBS:Cut the Wagyu beef tenderloin into 3/4 inch chunks. Marinate if desired, then thread the kabob pieces onto skewers and grill or broil using high heat. Once cooked to desired doneness, remove from grill or oven and allow them to rest for about 5 minutes.
STEAKS:If cooking the tenderloin end pieces as steaks, keep in mind that pieces with a tapered profile will likely result in one end being more well done than the other. We suggest using the tapered end pieces as an ingredient cut. For more uniform shaped pieces, cook using your grill, skillet, or oven to your desired doneness. Remove from heat and let them rest for about 5 minutes.
STIR-FRY:Slice the tenderloin tip or tail across the grain into thin finger sized strips. Pre-heat a frying pan / skillet / wok over high heat. Once hot, quickly cook the slices for 1 to 2 minutes on each side. Remove from heat and let the slices rest for 5 minutes.

Each frozen and individually vacuum sealed product is carefully packed with dry ice and/or gel packs. Orders will be delivered frozen or slightly thawed (but still cold) depending on the time in transit.
