Cut from the short loin, the Fullblood Wagyu beef strip steak is extremely tender. Highly marbled with abundant flavor, this juicy cut melts in your mouth. A favorite of Double 8 Cattle Company’s owner, the strip steak truly embodies the bold, signature flavor of Fullblood Wagyu beef!

Cooking Tips

Whether pan seared and oven roasted or simply grilled with a dash of kosher salt, this steak is in a league of its own. This highly marbled cut doesn't require much seasoning. We recommend light seasoning of kosher salt and ground black pepper.

Cook to Rare or Medium-Rare for best flavor and texture. Overcooking can cause too much of the intramuscular fat (marbling) to melt away, leaving it tough and chewy.

Avoid cooking over direct flame. Due to high amount of intramuscular fat, as the strip steak cooks, that fat will begin to melt and drip off, which can create a lot of smoke and cause the flame to flare up.

Recommended Internal Cooking Temps:

Rare 120°-125°
Medium Rare 130°-135°
Medium 140°-145°
Medium Well 150°-155°
Well Done 160° and above

    SO impressed

    The packaging is amazing. We live in south Florida and it's summer. The 4 Strip steaks I ordered were frozen like a rock when received. I try to always buy prime beef for steaks from the butcher, as the supermarket meat is OK, but not as good as prime. These were levels beyond. Double 8 has a new following.

    Fullblood Wagyu Strip Steak -- OMG!

    I purchased the fullblood Wagyu strip steak and prepared it last night. Frankly, it is the best steak I have ever had. The steak melts in your mouth and the flavor was rich and exquisite -- I savoured every bite and pared it with my favorite cabernet. The steak is well worth the price, but buy several to take advantage of the shipping costs. Jon Tapping
