The boneless portion of the diaphragm muscle, the Fullblood Wagyu skirt steak is cut from the plate primal. Long and thin, the skirt steak is known for being rich in flavor and extremely versatile. A favorite cut to marinade and sear over high heat on the grill, the skirt steak can also be pan cooked or broiled. The skirt steak cooks quickly and shines as a center-plate steak, but it’s also ideal for fajitas, steak salads, tacos, and grilled steak hash. Once cooked, cut the skirt steak in thin pieces against the grain, and enjoy every tender, tasty bite!

Due to natural variations in our cattle, shape, size, and/or weight of individual cuts may vary. It is normal to see slight variations in color depending on both the type of product and the aging process.

Perfect cut for fajitas, beef sandwiches, pasta, beef skewers, and stir-fry! Ideal for marinating, the skirt steak is best seared and grilled. For optimum tenderness and mouth-watering results, cook the steak to medium-rare and cut against the grain before serving.

Recommended Internal Cooking Temps:
Rare - 120°-125°
Medium Rare - 130°-135°
Medium - 140°-145°
Medium Well - 150°-155°
Well Done - 160° and above
Orders are processed Monday through Wednesday for Tuesday through Friday delivery, excluding holidays, based on shipping method selected at checkout. Orders placed after 3:00PM EST will ship the next eligible business day. We do not ship on Friday, Saturday, or Sunday and orders cannot be delivered on Saturday, Sunday, or Monday.

PACKAGING: Each frozen and individually vacuum sealed product is carefully packed with dry ice and/or gel packs. Orders will be delivered frozen or slightly thawed (but still cold) depending on the time in transit.


Orders placed on Monday (all day) and Tuesday (all day) - Customers may select Overnight, 2-Day, 3-Day or Standard Ground Shipping.

Orders placed on Wednesday (before 3:00 PM EST)- Customers may select Overnight or 2-Day Shipping. * 3-Day and Standard Ground Shipping selections may not ship until the following Monday due to time in transit. *

Orders placed on Thursday (before 3:00 PM EST)Customers may select Overnight Shipping. * 2-Day, 3-Day and Standard Ground Shipping selections will ship the following Monday. *

Wagyu Skirt

This Product was very Tender and Juicy. Best skirt steak I ever had and i had a lot of Skirt Steak. I bought 2 and each were 1.5 pounds and the total cost $100 dollars delivered. The Only downfall is that on the second one I trimmed 5 oz of fat from the 1.5 pounds. But more important if i am paying $45 a pound delivered I expect the silver skin to be completely removed by the butcher. I do believer all silver skin should be removed at this price.

I have always been a Rib eye guy still am; but every real meat lover knows, that a skirt steak is about as flavorful as any; but usually a little tough, double 8 skirts are so so tender and flavorful we can t get enough of them!! i ve tried many different things and all are amazing!! the little difference in price is nothing compared to the quality of this ranch!!! try a burger WOW!!
