Fullblood Wagyu Shank / Osso Buco Steak

Description
Cut from the leg just above the knee or hock, The Fullblood Wagyu beef shank is sometimes referred to or sold as "soup bones" because the steak includes part of the leg bone (with marrow inside bone). Beef shanks are a naturally tough cut of meat, but when cooked slowly at a low temperature, the meat become extremely tender and flavorful.

Cooking Wagyu beef shank requires time. Plan to cook at a low temperature for at least 4 - 6 hours, to transform this naturally tough cut of meat to tender and flavorful.

We recommend searing the shank steaks in a hot skillet first. Then transfer to a crock pot, Dutch oven, or deep casserole dish. Add chopped vegetables and other desired aromatic ingredients. Then pour in beef broth or other liquid to submerged the bottom half of shank. Cover and cook in oven at 325°F, or in crock pot on low heat, for 4-6 hours or until you can easily twist off / shred the shank meat with a fork.

Once cooked, remove the shanks and strain out the liquid. Discard the aromatics and place vegetables with the shanks. You can now heat and thicken the strained liquid to use as a sauce or add vegetables and shank back in to make a stew.

Recommended Internal Cooking Temps:
Rare - 120°-125°
Medium Rare - 130°-135°
Medium - 140°-145°
Medium Well - 150°-155°
Well Done - 160° and above

    Decadent French onion soup

    I used the shank, oxtail and soup bones to make beef broth for French onion soup. But instead of following Julia's recipe to strain out the meat bits, I left it in. She apparently never had WAGYU! I haven't used the osso busco yet, but look forward to it.
