Double 8 Cattle Company is one of only a handful of farms raising 100% Fullblood Wagyu in the United States. 100% Fullblood Wagyu differ from most Wagyu being raised in the States, which often fall into the categories of Crossbred (F1, F2, F3) or Purebred (F4). The term "American Wagyu" has been adopted as marketing term for Wagyu beef that is Crossbred or Purebred Wagyu.
At Double 8 Cattle Company, we only raise 100% Fullblood Japanese Black Wagyu. Our cattle are direct descendants of Japanese Wagyu with unmixed ancestry. They are certified and registered with the American Wagyu Association, and their DNA can traced to their original ancestors in Japan. Our Wagyu have never been crossbred with other cattle breeds, such as Angus.
Brisket turned out to be the best one I’ve ever cooked. The only reason I can’t give it a 5 star is because it was a 23lb brisket and after trimming all the fat and the shoulder meat from it, it only yielded 10 lbs of meat. Most packer briskets I’ve bought in the past have been trimmed of other meat and it’s just the fat cap you have to trim. I’ll probably still do it again but don’t think I can make the purchase a regular thing.

I am not one to give reviews in fact this is my first one. But one must give credit where credit is due. Excellent costumer service. These people takes pride on their cattle and their work, that is evident from the moment you open the box and it becomes even more so when you lay eyes on that beautiful piece of meat. Can’t wait to get it on the grill. I am definitely placing my next order with these fellows. And prices are certainly competitive.
Brisket was great. I couldn't get it to hit 203. It seemed to stall again at 189 for 2 hours so I took it off and threw it the cooler. Still ended up melt in your mouth perfect. Not a normal brisket. Prime doesn't compare.
