Part of the short loin and the “diamond” of the tenderloin, the filet mignon is arguably the most tender cut of Fullblood Wagyu beef. Embodying the melt-in-your-mouth quality with beautiful marbling, the filet mignon is the ideal steak for the most discerning palate!

Best cooked quickly and over direct heat, the filet mignon’s tenderness and rich flavor are best highlighted when the steak is cooked to a medium-rare or medium doneness.

Recommended Internal Cooking Temps:
Rare - 120°-125°
Medium Rare - 130°-135°
Medium - 140°-145°
Medium Well - 150°-155°
Well Done - 160° and above

    The best steak I have ever made at home/eaten to date. Flavor was out of this world........ The tenderness... you don't need a knife. WE WILL be ordering a lot of these when they're available.

    Filets

    The best Filet I have ever ate. I overcooked it just a little so I was mad at myself but that had only made it better because of the marbling. They are pricey but I will continue to buy these for special occasions. There is no better piece of meat. Ted

    Filet Mignon

    The filet mignon was very good, melted in your mouth but I am not so sure it is that much better than a good prime filet mignon. I will try this again and cook one of each side by side, but for the price differential I will probably stick with prime.

    Wagyu Filet Mignon

    These steaks were delicious!Grilled them at 700 degrees for 3 min a side and reverse seared them.Perfect medium rare and the taste was incredible.Can’t Recommend these steaks highly enough!!!
