The Fullblood Wagyu Teres Major Filet is a steak with many names. Chuck Tender Steak, Mock Tender Filet, Bistro Filet, Shoulder Petite Tender, Should Tender Filet, just to name a few. Cut from the teres major muscle from the blade of the shoulder (chuck), the Fullblood Wagyu Teres Major Filet is most similar to the Tenderloin Filet or Filet Mignon in size and shape. Although not as tender or marbled as a Filet Mignon, this steak is packed full of flavor. Best when marinated or cooked slowly to maximize tenderness.

The Wagyu Teres Major Filet is a lean cut with ample marbling. To maximize taste and tenderness, we suggest marinating before grilling or cooking in a skillet. This cut is also great for slow cooking recipes.

Medium Rare - 130°-135°
Medium - 140°-145°
Medium Well - 150°-155°

    Waygu Teres Major Filet

    One of the best steaks I’ve ever eaten.I smoked it at 225 degrees for 1.5 hrs then reverse seared it.The marbling gave it a terrific flavor and tenderness.If you have never tried Waygu beef you are in for a fantastic treat!!!
