  • 1 PACKAGE (8) Double 8 Cattle Company Fullblood Wagyu Beef Hot Dogs
  • 8 Hot Dog Buns
  • 1/4 CUP Mayonnaise
  • 1 TSP Sriracha Chili Sauce (start with 1 TSP and increase as needed)
  • 2 Medium Carrots (peeled, chopped)
  • 1/4 CUP Brown Sugar
  • 6 TBSP Rice Wine Vinegar
  • 1 PINCH Kosher Salt
  • 2 Jalapenos (chopped) (optional: remove seeds)
  • 1/3 English Cucumber (chopped)
  • 1 CUP Cilantro Leaves

            • Chef’s Knife
            • 2 Small Bowls
            • Grill
            • Cutting Board
            • Paper Towels
            • Tongs
            • Food Processor or Blender
            • Mason Jar

            FIRST STEP

Take the Fullblood Wagyu beef hot dogs out of the freezer, and place them in the refrigerator 24 hours before starting this recipe.

Combine the brown sugar, rice wine vinegar, and kosher salt in a small bowl. Stir to combine.

Place the chopped carrots in a mason jar or another small container.

Pour the pickling liquid in with the carrots, and allow it to rest for at least 30 minutes.

After at least 30 minutes, drain the pickled carrots.

Then, place the carrots in a food processor or blender.

Add the chopped jalapenos (optional: remove seeds if you want) and the chopped cucumber as well.

Pulse the food processor or blender 3-5 times until finely chopped.

Pour the mixture into a bowl, and refrigerate until ready to use.

Combine the mayonnaise and Sriracha sauce in a small bowl, and mix until combined.

            Refrigerate until ready to use.

NOTE: You can add more Sriracha sauce if you like it spicier.

Preheat your grill to 500°F or high.

Take the Wagyu beef hot dogs out of the packaging, and pat them dry with a paper towel.

Once the grill is at the desired temperature, place the Wagyu beef hot dogs on the grill.

Cook for 4-5 minutes or until they begin to char.

Flip the hot dogs, and cook for another 4-5 minutes.

Once the hot dogs have finished cooking, remove them from the grill, and set them aside.

            FINAL STEPS

Lay out your 8 hot dog buns, and place a grilled Wagyu beef hot dog in each bun.

Slather each Wagyu beef hot dog with the sriracha-mayo sauce.

Next, top each hot dog with a scoop of the blended carrot, jalapeno, and cucumber mixture.

Lastly, garnish each Wagyu beef hot dog with some cilantro leaves.

            Serve, and enjoy!
