FIRST STEP
Take the Fullblood Wagyu beef for fajitas out of the freezer, and place it in the refrigerator 24 hours before starting this recipe.
PREPARING THE MARINADE
Place the Fullblood Wagyu beef for fajitas in a large mixing bowl.
Add the coca-cola to the bowl with the Wagyu beef, and marinate the beef in the refrigerator for at least 3 hours.
PREPARING THE CILANTRO-LIME RICE
Place the rice in a medium pot with 2 cups of water.
Bring to a boil over high heat.
Once the water begins to boil, cover the pot, and reduce the heat to a simmer.
Cook the rice over low heat for 25 minutes or until all of the liquid is gone.
NOTE: While the rice is cooking, start cooking your Wagyu beef and onion-pepper mix.
Once the rice has finished cooking, turn off the burner.
Stir in the chopped cilantro and lime juice.
Set the cilantro-lime rice aside until ready to use.
PREPARING THE WAGYU BEEF
Remove the bowl of marinated Wagyu beef from the refrigerator. Drain the liquid from the mixing bowl, and pat the beef dry.
Season the Wagyu beef generously with kosher salt, brown sugar, onion powder, and black pepper.
Heat a large skillet over high heat with 2 tablespoons of olive oil.
Once the oil is hot, add the seasoned Wagyu beef to the skillet.
Cook for 5-10 minutes until the Wagyu beef is cooked through and thoroughly browned.
Once the beef has finished cooking, set it aside in a bowl. Turn off the heat source.
PREPARING THE ONION-PEPPER MIX
Add 2 tablespoons of olive oil to a skillet over medium-high heat.
Once the skillet is hot, add the sliced sweet onion and peppers to the skillet.
Sauté for 5-10 minutes or until tender.
Once finished, turn off the burner, and place the onion-pepper mix in a bowl.
FINAL STEPS
Set out four bowls.
Divide the cooked Wagyu beef between bowls.
Then, add some cilantro-lime rice, onion-pepper mix, corn, and black beans to each bowl.
Top each bowl with a little salsa and queso, and garnish with cilantro (if desired).
Serve, and enjoy!
